Vegetable Stir Fry

A quick and healthy vegetable stir fry with broccoli, carrots, bell peppers, and peas, perfect for a weeknight dinner.

Ingredients

  • 2 cups broccoli florets
  • 1 cup carrots, sliced into sticks
  • 1 red bell pepper, sliced
  • ½ green bell pepper, sliced
  • ½ cup green peas
  • ½ small onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add onion and cook for 2 minutes until slightly softened.
  3. Add carrots and broccoli and stir-fry for 4–5 minutes.
  4. Add bell peppers and peas and cook for another 3–4 minutes.
  5. Stir in garlic and cook for 30 seconds until fragrant.
  6. Add soy sauce, salt, and black pepper, tossing to coat evenly.
  7. Cook until vegetables are tender-crisp. Serve hot.

Notes

  • Adjust cooking time for softer or crisper vegetables.
  • Substitute any vegetables based on preference.
