Pecan Pie Brownie Bombs

  • 1 box fudge brownie mix (plus ingredients listed on box)
  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/4 cup butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • 10 oz semi-sweet chocolate chips (for coating)
  • Extra chopped pecans (for garnish)

Instructions

  1. Bake the brownie mix as directed in a 9×13-inch pan. Let it cool completely.
  2. Melt butter in a saucepan, then stir in brown sugar, corn syrup, and salt. Let it bubble for 1–2 minutes. Remove from heat and stir in pecans and vanilla. Chill until thick.
  3. Crumble the cooled brownies. Flatten a bit in your palm, add pecan filling, then wrap and roll into a ball.
  4. Melt chocolate chips. Dip each bomb until fully coated. Sprinkle with extra pecans while wet.
  5. Refrigerate for 15–20 minutes until set. Serve slightly chilled.
