- 1 cup milk
- ½ cup plain Greek yogurt
- 1 tablespoon chia seeds
- 1 tablespoon maple syrup or honey
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- 1 ripe peach, diced
- Pinch of salt
- 1 ripe peach, thinly sliced (for topping)
- 2 tablespoons chopped walnuts or pecans (for topping)
- Extra cinnamon, for sprinkling
- 1 teaspoon maple syrup or honey, optional (for topping)
- In a medium bowl or large jar, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, cinnamon, and salt.
- Stir until the mixture is smooth and evenly combined.
- Fold in the diced peach.
- Cover and refrigerate for at least 4 hours or overnight.
