Mixed Vegetable Skillet

A quick and healthy sautéed mixed vegetable dish that’s perfect as a side or a light vegetarian meal.

  • 1 zucchini, sliced into rounds
  • 1 yellow squash, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • ½ cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • ½ cup asparagus pieces
  • ½ small onion, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add onion and cook for 2 minutes until softened.
  3. Add carrots and broccoli and sauté for 4–5 minutes.
  4. Add zucchini, yellow squash, mushrooms, bell pepper, and asparagus.
  5. Cook for 5–6 minutes, stirring occasionally, until vegetables are tender-crisp.
  6. Stir in garlic, salt, black pepper, and Italian seasoning.
  7. Cook for 30 seconds until fragrant. Remove from heat and serve warm.

Notes

  • Adjust seasoning to taste.
  • Serve immediately for best texture.
  • Store leftovers in an airtight container for up to 2 days.
