- 6 bell peppers (red, yellow, or orange), tops removed and seeded
- 1 lb ground beef
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- ½ cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1½ cups shredded Mexican blend cheese
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add onion and cook until softened.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Stir in garlic, taco seasoning, salt, and black pepper.
- Add cooked rice, black beans, corn, and diced tomatoes. Mix well and simmer for 3–5 minutes.
- Stuff the mixture evenly into the prepared bell peppers.
- Place peppers upright in a baking dish.
- Sprinkle shredded cheese generously over each pepper.
- Bake for 30–35 minutes until peppers are tender and cheese is melted and bubbly.
