Mediterranean Beef Kabob Platter

A delicious Mediterranean beef kabob platter with hummus, pita, and fresh salads.

Ingredients

  • 1 1/2 pounds beef sirloin or ribeye, cut into 1 1/2-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • Wooden or metal skewers
  • 4 pita breads, warmed and sliced
  • 1 1/2 cups hummus
  • 2 tablespoons olive oil, for drizzling
  • 1/2 teaspoon paprika, for garnish
  • 1 cup tabbouleh salad
  • 1 cup chopped tomato cucumber salad
  • 1/2 cup diced tomatoes
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Soak wooden skewers in water for 20–30 minutes before grilling.
  2. Whisk together olive oil, lemon juice, garlic, cumin, paprika, oregano, salt, black pepper, and red pepper flakes.
  3. Coat beef cubes in marinade and refrigerate for 30 minutes to 4 hours.
  4. Thread beef onto skewers.
  5. Preheat grill or grill pan over medium-high heat.
  6. Grill kabobs for 8–10 minutes, turning occasionally.
  7. Let beef rest for 5 minutes.
  8. Warm and slice pita bread.
  9. Drizzle hummus with olive oil and sprinkle with paprika.
  10. Arrange kabobs, pita, hummus, and salads on a serving board.
  11. Garnish with parsley.

  • Marinate longer for deeper flavor.
  • Use metal skewers to avoid soaking.
