Marry Me Chicken Soup

A rich and creamy Tuscan chicken soup with tortellini, spinach, and Parmesan cheese, perfect for a romantic dinner or cozy comfort food.

  • 1 Tbsp olive oil
  • 1 lb chicken breast, cooked & cubed
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes
  • 1 tsp Italian seasoning
  • 3 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 (14 oz) can diced tomatoes, drained
  • 1½ cups cheese tortellini (fresh or refrigerated)
  • 2 cups fresh spinach
  • Salt + pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Heat olive oil in a large pot and cook onion until soft. Add garlic, red pepper flakes, and Italian seasoning.
  2. Stir in cubed chicken and pour in chicken broth. Simmer for 10 minutes.
  3. Add tortellini and diced tomatoes. Cook until pasta is tender.
  4. Reduce heat and stir in heavy cream, parmesan, and spinach. Cook until creamy and spinach is wilted.
  5. Season to taste, garnish with basil or parsley, and serve with garlic bread.

  • Use fresh tortellini for best texture.
