Italian Sausage Potato Soup

Ingredients

  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 Tbsp olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 4 cups chicken broth
  • 4 medium Yukon gold potatoes, chopped
  • 2 cups chopped kale
  • ¾ cup heavy cream
  • ½ cup grated parmesan cheese
  • Salt + black pepper, to taste

Instructions

  1. Brown the sausage in a large pot with olive oil until crumbly.
  2. Sauté onion until soft, then add garlic, Italian seasoning, and red pepper flakes.
  3. Pour in chicken broth and add potatoes. Simmer until potatoes are tender.
  4. Stir in kale and heavy cream. Cook until kale softens.
  5. Turn off heat and mix in parmesan cheese. Season with salt and pepper.

Notes

  • Adjust red pepper flakes for preferred spice level.
  • Substitute kale with spinach if desired.
  • Store leftovers in an airtight container for up to 3 days.
