Ingredients

  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • 2 cups cooked white rice
  • 1 tbsp butter or olive oil
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • Salt, to taste
  • 1 cup cooked black beans or refried beans
  • ½ tsp cumin
  • ½ tsp chili powder
  • Salt, to taste
  • 1 cup guacamole
  • ½ cup salsa
  • ½ cup sour cream
  • Lime wedges, for serving

Instructions

  1. Season chicken with chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken until fully cooked and lightly charred. Remove and chop into bite-sized pieces.
  3. Toss cooked rice with butter, lime juice, cilantro, and salt until fluffy and fragrant.
  4. Warm beans in a small saucepan with cumin, chili powder, and salt.
  5. Assemble bowls with cilantro lime rice, chicken, beans, guacamole, salsa, and sour cream. Serve with lime wedges.
