High-protein spinach egg bites baked into convenient squares for a healthy make-ahead breakfast.

Ingredients

  • 8 large eggs
  • 2 cups fresh spinach, chopped
  • 1/4 cup milk (or half-and-half)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • Nonstick spray or butter for the pan

Instructions

  1. Preheat oven to 350°F. Grease an 8×8-inch baking dish with nonstick spray.
  2. Whisk together eggs, milk, salt, pepper, and garlic powder until smooth.
  3. Fold in the chopped spinach.
  4. Pour mixture into the prepared dish.
  5. Bake for 18–22 minutes until center is set.
  6. Cool for 5 minutes, then cut into bite-size squares.
