Ground Beef Sweet Potato Bowl

A healthy and flavorful ground beef sweet potato bowl with cottage cheese and avocado, perfect for meal prep or a quick dinner.

  • 1 lb ground beef
  • 2 large sweet potatoes, diced
  • 1 avocado, sliced
  • 1 cup cottage cheese
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons hot honey or chili honey

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the diced sweet potatoes with olive oil, paprika, garlic powder, chili powder, salt, and black pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 20–25 minutes, or until tender and lightly browned.
  4. Cook the ground beef in a skillet over medium heat for 7–9 minutes, breaking it apart as it browns.
  5. Season the beef with extra salt and black pepper if needed.
  6. Divide the roasted sweet potatoes, ground beef, cottage cheese, and avocado between bowls.
  7. Drizzle with hot honey before serving.
