This easy family dinner is the best clean eating meal prep—fresh, flavorful, and totally satisfying with bold Mediterranean vibes you’ll crave all week.

Ingredients

  • lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • Juice of ½ lemon
  • 4 cups chopped romaine or mixed greens
  • 1½ cups cherry tomatoes, halved
  • 1½ cups cucumber, diced
  • ½ cup red onion, finely chopped
  • 1 cup crumbled feta cheese
  • 1 cup plain Greek yogurt
  • ½ cucumber, grated & squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt, to taste

Instructions

  1. Marinate the chicken with olive oil, lemon juice, and spices.
  2. Grill or pan-sear the chicken for 6–7 minutes per side until cooked.
  3. Mix yogurt, cucumber, garlic, dill, and lemon juice to make the tzatziki sauce.
  4. Chop tomatoes, cucumbers, onions, and greens.
  5. Assemble the bowls with sliced chicken, veggies, feta, and tzatziki sauce.
