Golden Rolled Breakfast Crepes are thin, sweet pancakes perfect for a weekend brunch. They are easy to make and delicious with your favorite toppings.

  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tbsp melted butter (plus more for the pan)
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. In a mixing bowl, whisk together flour, sugar, and salt.
  2. Add eggs and whisk until combined. Slowly whisk in milk until the batter is smooth.
  3. Stir in melted butter and vanilla extract. Let the batter rest 10 minutes (helps make softer crepes).
  4. Heat a nonstick skillet (8–10 inch) over medium heat. Lightly butter the pan.
  5. Pour about 1/4 cup batter into the skillet and immediately swirl to spread into a thin layer.
  6. Cook 60–90 seconds until the edges lift and the bottom is lightly golden. Flip and cook 30–45 seconds more.
  7. Repeat with remaining batter, buttering the pan as needed.
  8. Roll each crepe into a neat tube and serve warm (great with tea, coffee, or your favorite toppings).

Notes

  • Let the batter rest for softer crepes.
  • Use a nonstick skillet for best results.
