  • 1 cup uncooked white rice (long grain or jasmine)
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 1/2 tsp kosher salt (more to taste)
  • 1/2 tsp black pepper
  • 23 tbsp fresh dill, chopped (plus more to serve)
  • 12 tbsp lemon juice (optional, brightens it up)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots. Cook 6–8 minutes until softened. Stir in garlic and cook 30 seconds.
  2. Add chicken broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
  3. Stir in uncooked rice. Reduce heat to a gentle simmer and cook 12–15 minutes (or until rice is tender).
  4. Stir in shredded chicken and simmer 2–3 minutes until warmed through.
  5. Turn off heat. Stir in fresh dill and lemon juice (if using). Taste and adjust salt/pepper. Serve hot with extra dill on top.
