  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup milk (or buttermilk)
  • 1 tsp vanilla extract
  • Vanilla ice cream for serving
  • Powdered sugar (optional)

Instructions

  1. Preheat oven to 350°F. Grease an 8×8-inch baking dish.
  2. Toss blueberries with sugar, cornstarch, lemon juice, vanilla, and salt. Pour into the dish.
  3. Whisk flour, sugar, baking powder, and salt. Stir in melted butter, milk, and vanilla until thick.
  4. Spoon batter over blueberries (some berries can peek through).
  5. Bake 40–45 minutes until golden and bubbling.
  6. Cool 10 minutes. Serve warm with ice cream.

Notes

  • Use fresh or frozen blueberries.
  • Buttermilk adds tanginess to the topping.
  • Cobbler thickens as it cools.
