Creamy Sausage Potato Soup

A hearty and creamy soup with smoked sausage, potatoes, and carrots, perfect for cold weather comfort food.

  • 1 tbsp olive oil
  • 14 oz smoked sausage, sliced into rounds
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, diced
  • 2 large carrots, chopped
  • 3 cups chicken broth
  • 1 cup milk (or half & half for extra creaminess)
  • 2 tbsp flour (for thickening)
  • 1 tsp dried parsley
  • Salt & black pepper, to taste
  • ¼ tsp crushed red pepper flakes (optional for heat)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium-high. Add sausage and cook until browned.
  2. Toss in onions, garlic, carrots, and potatoes. Stir and cook for 4–5 minutes.
  3. Pour in chicken broth and dried parsley. Cover and simmer for 20–25 minutes until potatoes are tender.
  4. In a small bowl, whisk flour with milk to make a slurry. Stir into soup and cook for 5–7 more minutes to thicken. Add salt, pepper, and red pepper flakes to taste.
  5. Ladle into bowls, sprinkle with chopped parsley, and serve with warm bread.
