  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 16 ounces mushrooms, sliced
  • 3 teaspoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup reserved pasta water
  • 1 tablespoon chopped parsley, optional

Instructions

  1. Bring a large pot of salted water to a boil and cook the bow tie pasta until al dente according to package directions. Reserve 1/4 cup pasta water, then drain.
  2. In a large skillet, heat the butter and olive oil over medium heat.
  3. Add the sliced mushrooms and cook for 6 to 8 minutes until softened and lightly golden.
  4. Stir in the minced garlic, salt, black pepper, and Italian seasoning. Cook for 30 seconds until fragrant.
  5. Pour in the heavy cream and stir well. Let it simmer gently for 2 to 3 minutes.
  6. Add the Parmesan cheese and stir until melted into a smooth, creamy sauce.
  7. Add the cooked bow tie pasta to the skillet and toss until fully coated.
  8. Stir in a little reserved pasta water if needed to loosen the sauce.
  9. Serve warm with extra black pepper and chopped parsley if desired.
