Creamy Chicken Stew

A creamy and hearty chicken stew with tender potatoes, carrots, and peas. Perfect for a cozy dinner.

Ingredients

Scale
  • 1½ pounds boneless, skinless chicken thighs or chicken breasts, cut into chunks
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced into thick pieces
  • 1½ pounds baby potatoes, halved
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup whole milk or half-and-half
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen green peas
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon butter

Instructions

  1. Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.
  2. Add the chicken pieces, season lightly with salt and pepper, and cook for 5–6 minutes until browned. Transfer the chicken to a plate.
  3. Add the onion and carrots to the same pot and cook for 4–5 minutes until they begin to soften.
  4. Stir in the garlic and cook for 30 seconds.
  5. Sprinkle the flour over the vegetables and stir for 1 minute.
  6. Slowly pour in the chicken broth while stirring to prevent lumps.
  7. Add the potatoes, thyme, rosemary, salt, black pepper, and browned chicken.
  8. Bring to a gentle boil, then reduce the heat to low. Cover and simmer for 20–25 minutes, or until the potatoes are tender and the chicken is fully cooked.
  9. Stir in the milk or half-and-half, frozen peas, and butter.
  10. Simmer uncovered for another 5 minutes until the stew is creamy and slightly thickened.
  11. Stir in the fresh parsley and adjust the seasoning to taste.
  12. Serve hot with thick slices of crusty bread.

Notes

  • Use chicken thighs for extra tenderness.
  • Substitute half-and-half with heavy cream for a richer stew.
  • Add other vegetables like celery or mushrooms if desired.
