Creamy Chicken and Peppers in 40 Minutes – Comforting & Delicious

A creamy garlic chicken and peppers skillet served over fluffy mashed potatoes for a comforting weeknight meal.

  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup milk (more as needed)
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 1 1/2 lbs boneless, skinless chicken breast, cut into strips
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated Parmesan (optional)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Make the mashed potatoes: Add potatoes to a pot, cover with cold water, and salt the water. Bring to a boil and cook 12–15 minutes until fork-tender. Drain well. Mash with butter and milk until smooth and fluffy. Season with salt and pepper.
  2. Cook the chicken: Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add chicken strips, season with salt, pepper, and Italian seasoning, and cook 5–7 minutes until browned and cooked through. Remove to a plate.
  3. Sauté the peppers: In the same skillet, add remaining 1 tbsp butter. Add sliced red and yellow peppers and cook 4–5 minutes until softened but still a little crisp. Stir in garlic and cook 30 seconds.
  4. Build the creamy sauce: Sprinkle flour over the peppers and stir for 1 minute. Slowly pour in chicken broth, stirring to smooth. Reduce heat to medium-low and stir in heavy cream (and Parmesan if using). Simmer 2–3 minutes until thick and creamy.
  5. Finish the skillet: Return chicken to the skillet and toss to coat. Simmer 2 minutes to warm through. Stir in chopped parsley.
  6. Serve: Spoon mashed potatoes onto plates and top with creamy chicken and peppers. Add extra parsley and black pepper if you like.

Notes

  • Use Yukon Gold potatoes for the creamiest mashed potatoes.
  • Adjust milk quantity for desired mashed potato consistency.
  • For extra richness, add Parmesan cheese to the sauce.
