Classic Beef Stew Recipe

A hearty and flavorful beef stew made with tender chuck roast, vegetables, and peas, perfect for a comforting meal.

  • 2 lbs chuck roast, cut into bite-size pieces
  • 3 tbsp flour
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • 4 large carrots, chopped
  • lbs baby potatoes, halved
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • ½ tsp paprika
  • 1 cup frozen peas (added at the end)
  • 1 tbsp cornstarch + 2 tbsp water (optional for thickening)
  • Chopped parsley for garnish

Instructions

  1. Toss beef in flour, salt, and pepper. Sear in hot olive oil until browned.
  2. Add onion and garlic, sauté until fragrant. Stir in tomato paste, Worcestershire, and spices.
  3. Add carrots, potatoes, and broth. Cover and simmer on low heat for 2 to 2½ hours, until meat is tender.
  4. Add peas and simmer another 5–10 minutes. For a thicker texture, stir in cornstarch slurry.
  5. Sprinkle with fresh parsley and serve hot with crusty bread.

Notes

  • For best results, use a well-marbled chuck roast.
  • Adjust seasoning to your taste.
