  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup buttermilk (or plant milk + 1 tsp vinegar)
  • 1 cup chopped walnuts (plus extra for topping)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven and line cake pan. In a bowl, whisk flour, cocoa, baking powder, soda, and salt.
  2. Beat butter, oil, granulated, and brown sugar. Add eggs and vanilla.
  3. Alternate folding in dry ingredients and buttermilk.
  4. Fold in chopped walnuts and optional chocolate chips.
  5. Pour batter into pan and bake at 350°F (175°C) for 35–40 min. Cool slightly, top with extra walnuts, slice, and serve.
