Cheesy Stuffed Peppers

A simple and delicious vegetarian dish featuring bell peppers stuffed with a cheesy rice and vegetable filling.

  • 4 bell peppers (green, yellow, or red), halved and seeded
  • 1 cup cooked rice
  • ½ cup onion, finely chopped
  • 1 cup mushrooms, chopped
  • ½ cup diced tomatoes
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1½ cups shredded mozzarella cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place bell pepper halves cut-side up in a greased baking dish.
  3. Heat olive oil in a skillet over medium heat.
  4. Add onion and mushrooms and cook until softened.
  5. Stir in garlic, diced tomatoes, cooked rice, Italian seasoning, salt, and black pepper.
  6. Spoon the filling evenly into each bell pepper half.
  7. Top generously with shredded mozzarella cheese.
  8. Bake for 30–35 minutes until peppers are tender and cheese is melted and golden.
  9. Garnish with fresh parsley before serving.

Notes

  • Use any color bell peppers you prefer.
  • For extra flavor, add a pinch of red pepper flakes.
  • Substitute mozzarella with cheddar or Monterey Jack cheese if desired.
