Cajun Sausage Potato Soup

A bold comfort food recipe loaded with smoky sausage, creamy potatoes, and a kick of Cajun heat.

  • 1 Tbsp olive oil
  • 1 lb andouille sausage, sliced
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 ½ lbs Yukon gold potatoes, peeled + cubed
  • 1 tsp Cajun seasoning (more to taste)
  • ½ tsp smoked paprika
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt + pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the sliced andouille sausage until golden.
  2. Add diced onion, bell pepper, and garlic. Cook until softened.
  3. Stir in potatoes, Cajun seasoning, and smoked paprika. Toss to coat everything.
  4. Pour in the chicken broth and bring to a boil. Lower heat and simmer until potatoes are fork-tender.
  5. Stir in heavy cream and simmer for 5 more minutes. Adjust seasoning and top with fresh parsley.

Notes

  • Adjust Cajun seasoning to taste for more or less heat.
  • Use Yukon gold potatoes for the creamiest texture.
  • Store leftovers in an airtight container for up to 3 days.
