Berry Compote Crepes with Yogurt is a delicious and easy-to-make breakfast or brunch dish. Thin, sweet crepes are filled with a warm mixed berry compote and topped with creamy Greek yogurt.

  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups mixed berries
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 1 cup plain or vanilla Greek yogurt
  • Fresh fruit slices, optional

Instructions

  1. In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla extract, and salt until smooth.
  2. Let the batter rest for 10 minutes.
  3. Heat a nonstick skillet over medium heat and lightly grease it.
  4. Pour a small amount of batter into the skillet and swirl to form a thin crepe.
  5. Cook for about 1 to 2 minutes, then flip and cook for 30 seconds more. Repeat with the remaining batter.
  6. To make the berry compote, add the mixed berries, sugar, and lemon juice to a small saucepan over medium heat.
  7. Stir the cornstarch with water, then pour it into the berries and cook until the sauce thickens slightly.
  8. Fold or roll the crepes and place them on a plate.
  9. Serve with Greek yogurt and spoon the warm berry compote over the top.
  10. Add fresh fruit slices if desired.
