Baked Salmon with Spinach

This melt-in-your-mouth dinner is a creamy, cheesy, and protein-packed way to elevate your salmon game—perfect for busy nights or special guests!

  • 4 salmon fillets (skinless, ~6 oz each)
  • 1 tbsp olive oil
  • 2 cups fresh spinach
  • 2 garlic cloves, minced
  • 1/2 cup cream cheese (softened)
  • 1/4 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • 1 cup shredded mozzarella cheese
  • Optional: breadcrumbs for topping

Instructions

  1. In a skillet, heat olive oil and cook garlic until fragrant. Toss in spinach and cook until wilted.
  2. In a bowl, combine cream cheese, sour cream, Parmesan, onion powder, salt, and pepper. Stir in the cooked spinach.
  3. Place fillets on a parchment-lined baking tray. Top each with a generous scoop of spinach mixture.
  4. Sprinkle mozzarella and breadcrumbs on top. Bake at 375°F for 18–20 minutes until the salmon is cooked through and the cheese is bubbly and golden.
  5. Let cool slightly before serving. Pair with rice, mashed potatoes, or roasted veggies.
