Vegan Garlic Chickpea Soup

A creamy, flavorful vegan garlic chickpea soup ready in minutes.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 5 garlic cloves, minced
  • 1 teaspoon thyme (fresh or dried)
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 3 cups vegetable broth
  • 1 tablespoon lemon juice
  • Salt & pepper, to taste
  • Drizzle of olive oil, for garnish
  • Crusty bread, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3–4 minutes. Stir in garlic, thyme, and red pepper flakes.
  2. Pour in the chickpeas and vegetable broth. Bring to a simmer and cook for 10–15 minutes.
  3. Blend the soup partially or fully using an immersion blender.
  4. Stir in lemon juice, season with salt and pepper, and adjust to taste. Drizzle olive oil on top.
  5. Serve in bowls with warm crusty bread.

Notes

  • Adjust red pepper flakes for desired spice level.
  • Blend more for a smoother texture.
  • Store leftovers in the fridge for up to 3 days.
