Sicilian Chicken Soup

A hearty Sicilian-style chicken soup with ditalini pasta, vegetables, and fresh herbs for a comforting meal.

Ingredients

  • 1 Tbsp olive oil
  • 1 small yellow onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 cup water
  • 1 ½ cups shredded cooked chicken
  • ¾ cup dry ditalini pasta
  • 1 cup baby potatoes, chopped
  • 1 cup chopped tomatoes (canned or fresh)
  • ½ tsp dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Cook until slightly softened.
  2. Stir in garlic and dried oregano for 1-2 minutes.
  3. Add broth, water, potatoes, and chicken. Bring to a boil, then simmer until potatoes are tender.
  4. Stir in ditalini pasta and chopped tomatoes. Simmer uncovered until pasta is al dente.
  5. Season with salt and pepper. Garnish with parsley before serving.

Notes

  • Use rotisserie chicken for quicker preparation.
  • Adjust seasoning to taste.
  • Store leftovers in the refrigerator for up to 3 days.
