shrimp stuffed shells

Creamy shrimp stuffed shells are a delicious seafood pasta bake featuring jumbo pasta shells filled with a cheesy shrimp mixture and smothered in a rich garlic Alfredo sauce.

Ingredients

Scale
  • 2024 jumbo pasta shells
  • 1 lb shrimp, peeled, deveined, and chopped
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 large egg
  • 2 tbsp chopped parsley (plus more for garnish)
  • 1/2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups half-and-half (or 1 cup heavy cream + 1 cup milk)
  • 1 cup chicken broth (or seafood stock)
  • 1 cup grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1/2 tsp kosher salt (plus to taste)
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. Cook jumbo shells in salted water 1–2 minutes less than package directions (al dente). Drain and rinse with cool water.
  3. In a skillet over medium heat, warm olive oil. Add chopped shrimp and cook 1–2 minutes just until turning pink. Add garlic and cook 30 seconds. Remove from heat.
  4. In a bowl, mix ricotta, 1 cup mozzarella, Parmesan, egg, parsley, Italian seasoning, salt, and pepper. Fold in the cooked shrimp.
  5. Make the Alfredo sauce: In a saucepan, melt butter over medium heat. Add garlic for 30 seconds. Whisk in flour for 1 minute. Slowly whisk in half-and-half and broth until smooth. Simmer 3–5 minutes until slightly thickened. Stir in Parmesan, Italian seasoning, red pepper flakes (optional), salt, and pepper.
  6. Spread about 1 cup of sauce in the bottom of the baking dish. Stuff each shell with the shrimp-cheese filling and arrange in the dish.
  7. Pour remaining sauce over shells. Top with remaining 1/2 cup mozzarella and extra Parmesan. Add a few shrimp pieces on top if desired.
  8. Bake 20–25 minutes until bubbly. Broil 1–2 minutes for extra golden top (watch closely).
  9. Garnish with parsley and serve hot.

Notes

  • Use fresh shrimp for best results.
  • You can substitute half-and-half with a mix of heavy cream and milk.
  • For a richer sauce, use seafood stock instead of chicken broth.
  • If you prefer less spice, omit the red pepper flakes.
