Sausage Potato Soup

A hearty winter soup featuring smoked sausage and potatoes, perfect for cold nights.

Ingredients

  • 1 lb smoked sausage, sliced
  • 4 medium Yukon gold potatoes, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 5 cups chicken broth
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot and sear sausage slices until golden-brown.
  2. Add chopped onions, carrots, and celery. Sauté until soft.
  3. Stir in garlic and tomato paste and cook for a few minutes.
  4. Add diced potatoes, broth, smoked paprika, salt, and pepper. Bring to a boil, then simmer for 20 minutes.
  5. Ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

  • For extra flavor, use chicken stock instead of broth.
  • You can substitute sweet potatoes for a different taste.
  • Leftovers can be stored in the fridge for up to 3 days.
