40-Minute Meatloaf Muffins: Irresistibly Cheesy Comfort

Mini meatloaf bites with cheddar cheese and BBQ glaze, perfect for a quick and tasty dinner.

  • 1 1/2 lbs ground beef (80/20 works great)
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1/2 cup onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika (or regular paprika)
  • 1 tsp Worcestershire sauce
  • 1/2 cup BBQ sauce
  • 2 Tbsp ketchup
  • 1 Tbsp brown sugar
  • 68 slices cheddar cheese (or 1 cup shredded cheddar)
  • Chopped parsley (optional)

Instructions

  1. Preheat oven to 375°F. Lightly grease a 12-cup muffin tin.
  2. In a small bowl, mix breadcrumbs and milk and let sit 2 minutes.
  3. In a large bowl, combine ground beef, soaked breadcrumbs, egg, onion, garlic, salt, pepper, paprika, and Worcestershire. Mix just until combined (don’t overmix).
  4. Divide mixture evenly into muffin cups and press lightly to form “bites.”
  5. Stir together BBQ sauce, ketchup, and brown sugar. Spoon a little glaze over each meatloaf bite.
  6. Bake 18–22 minutes, until cooked through (160°F internal).
  7. Top each with cheddar and return to oven 2–3 minutes until melted.
  8. Spoon on extra glaze, sprinkle with parsley, and serve warm.

Notes

  • Use lean ground beef for a healthier option.
  • Adjust seasoning to taste.
  • Store leftovers in an airtight container for up to 3 days.
