Ground Beef Potato Casserole

A hearty and cheesy ground beef and potato casserole, perfect for a family-friendly dinner. This one-pan dish is packed with flavor and easy to prepare.

Ingredients

  • 1.5 lbs baby potatoes, chopped into bite-sized chunks
  • 1 lb ground beef
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small onion, diced
  • 1½ cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F. Toss chopped potatoes with 1 tbsp olive oil, salt, pepper, and paprika. Roast for 25 minutes until crispy.
  2. In a skillet, heat 1 tbsp olive oil. Cook ground beef until browned, then add onions and peppers. Sauté until soft.
  3. Combine roasted potatoes, beef mixture, and half the shredded cheese in a casserole dish.
  4. Sprinkle remaining cheese on top. Bake at 375°F for 15 minutes until cheese is melted.
  5. Garnish with fresh parsley and serve hot.

Notes

  • For extra crispiness, broil the casserole for the last 2-3 minutes.
  • Leftovers can be stored in the fridge for up to 3 days.
