Ingredients

Scale
  • 1 lb sirloin steak (or ribeye), cut into bite-size pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 12 oz fettuccine
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 1/4 cups heavy cream
  • 3/4 cup grated Parmesan cheese (plus more to finish)
  • 1/2 tsp salt (to taste)
  • 1/2 tsp black pepper
  • 12 tbsp pasta water (as needed, to loosen sauce)
  • 1 tbsp chopped parsley (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Pat steak dry. Season with garlic powder, salt, pepper, and smoked paprika (if using). Heat olive oil in a skillet over medium-high heat. Add steak in a single layer and sear 2–3 minutes per side until browned. Add 1 tbsp butter, toss to coat, then remove steak from the pan and set aside.
  3. In the same skillet, lower heat to medium. Add 2 tbsp butter. Stir in minced garlic and cook 30 seconds until fragrant.
  4. Pour in heavy cream and simmer 2–3 minutes. Whisk in Parmesan until smooth and creamy. Season with salt and pepper.
  5. Add drained fettuccine to the sauce and toss. Add a splash of reserved pasta water if needed for a silky finish.
  6. Plate creamy fettuccine and top with chopped parsley and extra Parmesan. Serve steak bites on the side (or pile on top).

Notes

  • Use freshly grated Parmesan for the best flavor.
  • Adjust seasoning to taste.
  • Reserve pasta water to adjust sauce consistency.
