Garlic Parmesan Chicken

This oven-baked classic is the ultimate cozy comfort food—a one-pan wonder that’s bold, buttery, and packed with flavor for an easy family dinner!

  • 1.5 lbs boneless chicken breast or thighs, cut into chunks
  • 4 medium golden potatoes, diced
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 ½ cups shredded mozzarella or Italian blend cheese
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large bowl, toss chicken and potatoes with olive oil, garlic, paprika, garlic powder, salt, and pepper.
  2. Spread everything onto a greased baking dish or sheet pan. Bake at 400°F for 30–35 minutes until the potatoes are tender and chicken is juicy.
  3. Sprinkle mozzarella and Parmesan over the roasted chicken and potatoes. Pop it back into the oven for 5–7 minutes until cheese is melty and golden.
  4. Top with chopped parsley for a fresh finish.
  5. Serve straight from the oven with crusty bread or a side salad.
