Easy Chicken Stroganoff

A quick and creamy chicken stroganoff recipe that’s packed with flavor and ready in just 30 minutes. Perfect for a comforting weeknight dinner.

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 8 oz mushrooms, sliced
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/2 cup sour cream
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high. Add chicken, season with salt and pepper, and cook until golden and cooked through.
  2. Melt butter, then add mushrooms and onions. Cook until tender and golden.
  3. Stir in garlic, smoked paprika, Dijon, and broth. Let it simmer for 3–4 mins.
  4. Reduce heat to low. Stir in sour cream until smooth and velvety.
  5. Spoon over pasta, rice, or mashed potatoes. Top with fresh parsley.
