  • 1 cup grated Parmesan cheese
  • ¾ cup seasoned breadcrumbs or panko
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried dill
  • Salt & black pepper, to taste
  • 2 large eggs, beaten
  • ¾ cup mayonnaise
  • ¼ cup finely chopped dill pickles
  • 1 tbsp pickle juice
  • 1 tbsp fresh dill, chopped
  • 1 tsp garlic powder
  • Olive oil or avocado oil (for pan-frying)
  • Fresh dill & sliced pickles (optional, for topping)

Instructions

  1. Mix Parmesan, breadcrumbs, and seasonings in a bowl.
  2. Dip chicken in beaten eggs, then coat with the breadcrumb mixture.
  3. Heat oil in a skillet and cook chicken for 4–5 minutes per side until golden and cooked through.
  4. Combine mayonnaise, chopped pickles, pickle juice, fresh dill, and garlic powder to make the sauce.
  5. Serve chicken topped with dill pickle sauce and garnish with fresh dill.
