5-Minute Cucumber Tomato Salad – Summer in Every Bite

A refreshing Mediterranean-style salad combining crisp cucumbers, juicy tomatoes, and red onions with a simple olive oil vinaigrette.

Ingredients

  • 2 cups sliced cucumbers
  • 2 cups sliced tomatoes
  • 1/2 small red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar (or fresh lemon juice)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Add sliced cucumbers, sliced tomatoes, and thinly sliced red onion to a large bowl.
  2. Sprinkle in chopped parsley.
  3. Drizzle with olive oil and red wine vinegar (or lemon juice).
  4. Season with salt, black pepper, and red pepper flakes.
  5. Toss gently until everything is glossy and well coated.
  6. Let sit 5 minutes to marinate (optional), then serve chilled or at room temp.

Notes

  • Best served fresh but can be refrigerated for up to 2 hours
  • Add feta cheese for extra flavor
  • Works well with any type of tomato
