  • 1 Tbsp aluminum-free baking powder
  • 1 tsp kosher salt
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder (optional)
  • 1 Tbsp brown sugar
  • 1 Tbsp neutral oil (optional)

Instructions

  1. Preheat oven to 425°F. Line a sheet pan with foil and set a wire rack on top. Spray rack with nonstick spray.
  2. Pat wings very dry with paper towels.
  3. In a large bowl, mix baking powder, salt, paprika, garlic powder, onion powder, pepper, chili powder, and brown sugar. Toss wings in seasoning.
  4. Place wings on the rack in a single layer, leaving space between each.
  5. Bake 20 minutes, flip wings, then bake 20–25 minutes more until deeply golden and crispy.
  6. Broil 1–2 minutes for extra crispiness if desired.
