Creamy Tuscan Salmon

A rich, restaurant-style meal featuring buttery salmon in a velvety garlic cream sauce with spinach and mushrooms.

Ingredients

  • 2 salmon fillets (skin on or off)
  • Salt & black pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 2 cups baby spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried thyme or Italian seasoning
  • 1 tbsp chopped parsley (optional garnish)

Instructions

  1. Pat the salmon dry, season with salt and pepper. Sear in olive oil over medium-high heat, 4–5 mins per side until golden and flaky.
  2. In the same pan, melt butter and add garlic and mushrooms. Sauté 3–4 mins until softened and lightly browned.
  3. Toss in spinach and cook just until wilted.
  4. Add cream, Parmesan, and thyme. Simmer until thickened (about 3–4 mins), then season to taste.
  5. Return salmon to the pan, spoon sauce over top, and let it warm through. Garnish with parsley and serve immediately.

Notes

  • Use fresh salmon for best results.
  • Adjust seasoning to taste.
  • Serve with crusty bread or over pasta if desired.
