Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips (optional)
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 12 fresh raspberries

Instructions

  1. Preheat oven to 350°F. Grease a mini muffin pan.
  2. Melt butter and whisk in sugar.
  3. Add eggs and vanilla, whisk until smooth.
  4. Stir in cocoa powder, flour, and salt. Fold in mini chocolate chips if using.
  5. Spoon batter into mini muffin pan, filling each cup 3/4 full.
  6. Bake 10–12 minutes until tops are set. Cool completely.
  7. Heat heavy cream until steaming. Pour over chocolate chips and stir until smooth.
  8. Spoon ganache onto each brownie bite and press a raspberry into the center.
  9. Let ganache set before serving.

Notes

  • Store in an airtight container for up to 3 days.
  • For best texture, do not overbake.
