chocolate chip brioche buns

Soft and fluffy chocolate chip brioche buns with a rich buttery flavor and sweet chocolate chips.

Ingredients

Scale
  • 3 1/4 cups all-purpose flour (plus more for dusting)
  • 1/4 cup granulated sugar
  • 2 1/4 tsp instant yeast (1 packet)
  • 1 tsp salt
  • 1/2 cup warm milk (about 110°F)
  • 3 large eggs (2 for dough, 1 for egg wash)
  • 1 tsp vanilla extract (optional)
  • 6 tbsp unsalted butter, softened (cut into cubes)
  • 3/4 cup mini chocolate chips (or regular chocolate chips)

Instructions

  1. In a mixing bowl, whisk flour, sugar, yeast, and salt.
  2. Add warm milk and 2 eggs (plus vanilla if using). Mix until a shaggy dough forms.
  3. Knead 8–10 minutes (stand mixer with dough hook works best) until dough begins to smooth.
  4. Add softened butter a little at a time, kneading until fully incorporated and dough is glossy and elastic (about 6–8 minutes).
  5. Mix in chocolate chips until evenly distributed.
  6. Cover and let rise 1–1.5 hours, or until doubled in size.
  7. Divide into 8–10 pieces, shape into smooth balls, and place on a parchment-lined baking sheet.
  8. Cover and let rise 30–45 minutes until puffy.
  9. Brush tops with beaten egg (egg wash).
  10. Bake at 350°F for 16–20 minutes until golden brown and shiny on top. Cool slightly before serving.

Notes

  • Use instant yeast for best results.
  • Dough should be soft and slightly sticky but manageable with lightly floured hands.
  • Ensure butter is softened but not melted.
  • For extra shine, brush with melted butter after baking.
