Cheesy Ground Beef Casserole

The ultimate easy family dinner—this cheesy beef and potato bake is cozy, hearty, and packed with flavor that everyone will crave!

Ingredients

  • 1 lb ground beef
  • 5 medium potatoes, peeled and cubed
  • 1 small onion, finely chopped
  • 1½ cups shredded cheddar cheese
  • 1 can cream of mushroom soup (10.5 oz)
  • ½ cup milk
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)
  • 1 tbsp olive oil

Instructions

  1. In a skillet, heat olive oil over medium heat. Cook ground beef and chopped onions until beef is browned.
  2. Peel and cube the potatoes into bite-sized chunks. Toss them with garlic powder, paprika, salt, and pepper.
  3. In a greased baking dish, layer half of the seasoned potatoes, then half of the beef mixture. Repeat the layers.
  4. In a bowl, whisk together the cream of mushroom soup and milk. Pour evenly over the casserole.
  5. Sprinkle shredded cheddar on top. Cover with foil and bake at 375°F for 45 minutes, then uncover and bake another 15 minutes until bubbly and golden.
