Cheesy Chicken Enchiladas

Your go-to family comfort food—these creamy, cheesy enchiladas are packed with juicy chicken and ooey-gooey goodness in every bite!

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt & pepper to taste
  • 1/2 cup sour cream
  • 1/2 cup cream cheese (softened)
  • 1/2 cup shredded Monterey Jack or mozzarella cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • 1½ cups chicken broth
  • 1 cup sour cream
  • 1 small can diced green chiles (optional for mild heat)
  • Salt to taste
  • 8 medium flour tortillas
  • 1½ cups shredded mozzarella or Mexican blend cheese
  • Chopped parsley or cilantro, for garnish

Instructions

  1. In a bowl, combine shredded chicken with sour cream, cream cheese, garlic powder, cumin, salt, pepper, and shredded cheese.
  2. Scoop about 3 tablespoons of filling onto each tortilla, roll it up, and place seam-side down in a greased baking dish.
  3. In a saucepan, melt butter and whisk in flour. Slowly whisk in chicken broth and cook until slightly thickened. Remove from heat and stir in sour cream and green chiles.
  4. Pour the creamy sauce over the enchiladas and top with remaining shredded cheese. Bake at 375°F (190°C) for 25–30 minutes, or until golden and bubbly.
  5. Sprinkle with parsley or cilantro and serve hot.

Notes

  • For extra flavor, add jalapeños or hot sauce to the filling.
  • Use corn tortillas for a gluten-free option.
  • Store leftovers in an airtight container for up to 3 days.
