5-Star Cheesy Breakfast Casserole That’ll Wow Your Family

A hearty and cheesy breakfast casserole with tater tots, sausage, and eggs. Perfect for brunch or make-ahead mornings.

  • 1 lb breakfast sausage
  • 6 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 (32 oz) bag frozen tater tots
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions

  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook breakfast sausage until browned and fully cooked. Drain excess grease.
  3. In a bowl, whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
  4. Spread cooked sausage evenly in the baking dish. Sprinkle with 1 cup of shredded cheddar cheese.
  5. Arrange frozen tater tots evenly over the top.
  6. Pour egg mixture evenly over the casserole.
  7. Sprinkle remaining cheddar cheese on top.
  8. Bake uncovered for 40–45 minutes, or until eggs are set and tater tots are golden brown.
  9. Let rest for 5 minutes before slicing and serving.

Notes

  • You can prepare this casserole the night before and refrigerate until ready to bake.
  • For a spicier version, use hot breakfast sausage or add red pepper flakes.
  • Reheat leftovers in the oven or microwave.
