Carrot Cream Cheese Cupcakes

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven and line cupcake tin. Mix dry ingredients—flour, spices, baking powder, and salt.
  2. Cream butter and sugars until fluffy, then add eggs and vanilla. Fold in grated carrots, pineapple, and nuts.
  3. Fill liners 2/3 full and bake for 18–22 minutes.
  4. Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
  5. Core each cooled cupcake, fill with cream cheese mixture, and top with remaining frosting.

Notes

  • Optional nuts add crunch.
  • Drain pineapple well to avoid excess moisture.
