  • 1 1/4 pounds flank steak or sirloin, thinly sliced
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil, divided
  • 2 medium carrots, peeled and cut into thin sticks
  • 1 large green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup beef broth or water
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 tablespoon chopped parsley or green onion for garnish

Instructions

  1. Toss beef with cornstarch, salt, and pepper.
  2. Mix sauce ingredients in a bowl.
  3. Heat oil in a skillet and cook beef for 2-3 minutes. Remove.
  4. Add remaining oil and stir-fry carrots, pepper, and onion for 4-5 minutes.
  5. Add garlic and ginger, cook for 30 seconds.
  6. Return beef to skillet and pour in sauce.
  7. Cook for 2 minutes, then add cornstarch slurry to thicken.
  8. Garnish and serve hot.
